Irresistible Peach Pie Recipe

250g all-purpose flour
125g unsalted butter
1 egg yolk
2 teaspoons brown sugar
1/2 teaspoon ground cinnamon
2 cl warm water
2 teaspoons brown sugar (optional)

- Pie Filling Ingredients
10 medium-sized peaches
10g unsalted butter
1 teaspoon brown sugar
Directions
- Pie Dough
- Mix all the dry ingredients with a fork: flour, sugar and ground cinnamon.
- Cut butter into small pieces and add to the mixture slowly. Use your fingertips to incorporate the butter.
- Add the egg yolk and mix thoroughly.
- Take the 2cl of warm water and add it to the dough very slowly. The result should not be hard or sticky. You do not have to use all the water.
- Put the dough in a bowl and refrigerate it for an hour.
- Pie Filling
- Select 10 medium-sized peaches. They should not be too ripe.
- Put the peaches in a deep bowl and pour hot water on the fruit. Soak them for about a minute. This will make peeling easier.
- Afterwards, peal the peaches and cut them into small quarters. Make sure to remove the core.
- Put 10g of unsalted butter in a nonstick pan. Leave for 10 to 20 seconds.
- Add the quarters of peaches. After about two minutes, sprinkle some brown sugar on top of the peaches. Cook until the peaches are a bit caramelised. Leave to cool.
- Preheat oven to 180 degrees Celsius.
- Take the dough from the fridge. An hour should have passed. Roll it out and then transfer it to the pie dish.
- Add the peaches using a tablespoon.
- Bake the pie for 40 minutes.
- Serve and enjoy! Add vanilla ice cream for more enjoyment!

Notes
- Use refrigerated butter for better results. The dough should not be warm when you work with it.
- You can also add a 1/4 teaspoon of salt to the recipe. I chose to use none because the peaches are acidic enough. A pinch of salt would also do.
- For this recipe, use a small to medium-sized pie dish.
