Delicious Egg Stew Recipe—My French Husband Loved it! It’s Really Good!(Level A2-B1)

The French are known to be picky eaters. They choose their products well and they like to cook from scratch. I made this egg stew for my husband and he loved it so much! Why don’t you try it? (Level A2-B1)

Delicious Egg Stew Recipe

Ingredients

  • 8 medium-sized free-range eggs

  • 2 large tomatoes

  • 1 red bell pepper

  • 1 green bell pepper

  • 1 medium-sized onion

  • Some fresh chives

  • 1 teaspoon curry

  • Olive oil

Directions

  • Select fine eggs. They should not be damaged on the exterior otherwise they will break while boiling.
  • Cut fresh ingredients: red and green bell pepper, onion, chives.
  • Pour hot water on tomatoes and set aside to cool. Afterwards, peel and cut tomatoes into small pieces.
  • Boil eggs over medium-sized heat for about 6 to 8 minutes. The eggs should be hard-boiled so they don't fall apart while being stewed. Once boiled, remove eggs from the water. The eggs should not be soggy!
  • To make the sauce, put a little oil in a non-stick pan. The heat should be low to medium-sized.
  • Add the chopped onions. Fry for about 2 to 4 minutes.
  • Add the rest of the ingredients in the following order: red bell pepper, green bell pepper, chives. Don't use all the chives! Let it simmer for about 5 minutes.
  • Peel the eggs. You can rinse them before and after peeling. This will make the process easier and neater.
  • Cut eggs in half. Use a sharp knife for better results.
  • Add eggs slowly to the sauce. Let it simmer for about 3 to 4 minutes. Add some chives and cook for an additional minute.
  • Serve with broccoli and rice. Bon appétit!

Notes

  • You don't have to use all the red and green bell pepper. You can kep some for future use.
