A soft and moist yet crunchy chocolate cake recipe that has been our family's staple for more than 20 years. It's very easy to make and quick to finish eating. Everyone loves it!

Ingredients

  • 150g all-purpose flour

  • 170 g granulated sugar

  • 200g dark chocolate for baking

  • 125g of natural yoghurt

  • 100 ml vegetable oil

  • 2 medium-sized eggs

  • 1 tablespoon baking powder

  • A little butter to grease the rectangular baking mould

  • Ustensils and Equipment
  • An oven

  • 2 medium-sized bowls

  • Sieve (optional)

  • A small pot (optional)

  • An electric mixer with a whisk attachment (or)

  • A manual whisk

  • A wooden spoon (or)

  • A spatula

  • A fork

  • Medium-sized rectangular baking mould

Directions

  • Pre-heat your oven to 180 degrees Celsius (356 degrees Fahrenheit).
  • Place the eggs and sugar in a clean bowl. Beat these ingredients until the mixture becomes creamy and smooth.
  • Add the yoghurt and stir the mixture again using a wooden spoon.
  • Put flour in another bowl and add the baking powder. Mix with a clean fork or a manual whisk.
  • Sieve the flour into the mixture of eggs, sugar and yoghurt.
  • Add the vegetable oil to the mixture carefully. You can use a wooden spoon or a spatula.
  • Melt the chocolate in a microwave. You can also heat some water in a pot and place a heat-proof dish over the boiling water. The chocolate will melt in an even way when you use this method.
  • Add the melted chocolate to the previous mixture of eggs, sugar, yoghurt, flour and vegetable oil. Fold in carefully with a spatula or a wooden spoon.
  • Grease the rectangular baking mould and flour it lightly.
  • Pour the cake mixture in the baking mould and bake for about 35 to 40 minutes.
  • You can decorate your plate with fresh strawberries.
  • Enjoy your moist cake with a cup of tea! Bon appétit!

  • Only use dark chocolate that is meant for baking or cooking.
  • You can also enjoy your cake with whipped cream and some vanilla ice cream.
  • You can use any other types of berries to decorate the cake: strawberries, raspberries, blueberries or blackberries.

Happy Easter! Why this Lovely Chocolate Loaf Cake is our Family’s Favourite

Easter is one of my favourite holidays of the year. I especially loved it when my daughters were small because of the way they looked forward to the festivities.

Back in the days, we used to buy a lot of chocolate to do egg hunts. I even remember that we did an egg hunt in the snow. It was so weird to hunt for eggs and then make snowmen afterwards. This year, the weather has graced us with beautiful, sunny days. I hope this lasts though because the weather has become so unpredictable.

My daughters are older now and the thought of an Easter egg hunt no longer appeals to them as it did in the past. Nowadays, we just buy a few chocolates and eat them without the ceremony.

This is why this lovely chocolate loaf cake comes in handy because it has been our family’s favourite for more than 20 years. It’s very easy to make and the ingredients are not hard to find. Besides, it’s quick to bed and everyone loves it. My youngest daughter, who is picky eater, adores it and I know that a recipe is successful when she finishes her plate. She even learnt how to make this lovely chocolate loaf cake!

This is a rich cake that I make once in a while because of its high sugar content and fat. It is a sort of guilty pleasure, but hey, life is meant to be enjoyed, isn’t it? This cake goes well with a cup of black tea or a cup of coffee.

We usually have it for afternoon tea but sometimes we eat it with vanilla ice cream and whipped cream when we want a decadent dessert. It is so nice! You can even also add walnuts for a crunchier feel.
