minutesThis fresh strawberry pie is a celebration of summer before autumn takes centre stage. Enjoy the last days of sunlight and delicate warmth before the season turns.
Ingredients
500g fresh strawberries
250g all-purpose flour
125g unsalted butter
1 egg yolk
2 cl lukewarm water
A pinch of salt (optional)
1/4 teaspoon of ground cinnamon (optional)
Rice or beans
- For the Filling
250 g half fat cottage cheese (Twaróg wieski półtłusty)
250g mascarpone
- For the coulis (Optional)
Fresh strawberries
1 mango (optional)
50g of icing sugar
- Utensils
1 pastry dish
1 mixer or blender
1 potato masher
1 wooden spoon
1 tablespoon
1 medium-sized bowl
1 small pot
Directions
- Carefully mix all the dry ingredients with a fork: flour, salt and and ground cinnamon (optional)
- Cut butter into small pieces and add to the mixture slowly. Use your fingertips to incorporate the butter.
- Add the egg yolk and mix thoroughly until you get a crumbs-like consistency.
- Take the 2cl of warm water and add it to the dough very slowly. The result should not be hard or sticky. You do not have to use all the water.
- Put the dough in a bowl and refrigerate it for at least an hour.
- Preparing the Strawberries
- Wash the strawberries carefully and then remove the top.
- Cut each strawberry into half, rinse and drain carefully.
- Baking the Pie Crust
- Remove the pie dough from the fridge after an hour.
- Roll it out carefully and transfer to a pastry dish.
- Put rice or beans inside.
- Bake for 15 minutes at 170 degrees Celsius.
- After 15 minutes, take the crust out and remove the top rice or beans.
- Finish the process by baking it again for 15 minutes. Remove all the rice or beans afterwards. Let it cool.
- Preparing the Pie Filling
- Take a medium-sized bowl and pour in the cottage cheese and the mascarpone carefully.
- Mix the contents of the bowl with the back of a tablespoon.
- Transfer the contents to the pie crust. Make sure the filling is even.
- Add the strawberries neatly.
- Refrigerate the pie until you serve it.
- Making a Coulis (Optional)
- Put properly cut and well washed fresh strawberries into a small pot.
- Add diced mangoes.
- Add 50g of icing sugar and a little water.
- Cook at medium heat until the water reduces.
- When cold, serve with the fresh strawberry pie. Enjoy!

Notes
- You can refrigerate the pie dough from 1 to 2 hours. The colder the dough, the easier it is to work with.
- You can the serve the fresh strawberry pie with whipped cream.
- You can also cut the strawberries into quarters if you prefer.
Fresh Strawberry Pie Recipe!
There’s something bittersweet about baking with the last strawberries of the season.
Their ruby-red glow carries all the warmth of summer—sunlit afternoons, sweet desserts shared with friends and family, the gentle hum of bees among the blooms and sweet, melodious sounds of children running and playing outside.
Now that autumn is beginning to settle in, this fruit feels even more precious, a fleeting treasure to celebrate before the cool weather takes over.
This pie is my way of saying goodbye to summer.
Hence, as a sign of respect, I chose the freshest and juiciest strawberries, each one plump and fragrant, so as to do justice to this fresh strawberry pie.
Equal attention was given to the crust which turned out all flaky and golden.
Fresh Strawberry Pie: A Final Taste of Summer?
One of the reasons why I like making this fresh strawberry pie is because it is light, yet indulgent.
Besides, when you eat it, each slice captures the vibrant freshness of the fruit.
It is as if every bite were a reminder of summer’s last whispers: the warmth of the sun on your skin, the scent of blossoms in the air, the simple pleasures of fresh fruit bought on the roadside.
There is a sense of ritual when you take the pie out of the oven and slice it for the first time.
As the knife glides slowly, it dawns on you that these are the final strawberries of the year.
You feel a tinge of sadness because you realise that this pie is special.
The truth is it feels more than a dessert.
This fresh strawberry pie is memory, nostalgia and joy all wrapped into one simple, elegant dish.
But not only.
A Gentle Nudge for Your Health
This pie is not only delicious, but it is also packed with vitamin C, antioxidants and fibre. Obviously, this is a natural way to nourish your body while indulging your senses.
Another good thing is that, one does not need to add extra sugar to the pie crust or the filling. You can make a coulis with the remaining strawberries or any other fruit of your choice.
I actually made the coulis with a mango, icing sugar and few strawberries and it was a taste of heaven. Therefore, you can also get creative using a minimal amount of sugar for maximum taste.
For serving, I kept it simple so the strawberries remained the star. You can add a dollop of whipped cream or add a little powdered sugar. A scoop of vanilla ice cream will also do the trick.
Letting Go of Summer and Being Forever Grateful
As the last slice of the pie disappears, you feel a certain sense of loss. However, you should not feel sad because this is the nature of life.
Seasons come and go and this makes us even look more forward to the next summer.
There is joy in letting go. This “fresh crimson farewell” is not just an ending. It is a celebration of everything summer gave us, a taste of sweetness to carry with us as the days grow cooler and the leaves turn golden.
So, whether shared with friends on a sunny afternoon, savoured quietly with a cup of tea, or presented as a centerpiece for a seasonal gathering, this fresh strawberry pie is a love letter to summer.
It is bold, beautiful, and fleeting, leaving behind nothing but sweetness and memory.
