Winter Food Staples

- Fresh Winter Salad
1 cucumber
1 bunch of radishes
1 to 2 medium-sized carrots
1 red bell pepper
2 small tomatoes
A bunch of parsley
1 medium-sized red onion
Olive oil
Vinegar (Apple cider or Balsamic)
Salt
Pepper
- Orange Juice
4 oranges
- Utensils
Salad bowl
Citrus juicer
Directions
- Fresh Winter Salad
- Wash all the vegetables carefully.
- Remove the tips of the radishes and keep the leaves for later use.
- Peel the carrots and cucumbers and cut them into small pieces.
- Cut the red bell pepper into half. Store the other half and dice the remaining half.
- Chop the tomatoes and red onion.
- Mix all the ingredients together.
- Chop some parsley into the mixing bowl using a pair of kitchen scissors.
- Season with olive oil, vinegar, salt and pepper.
- Mix well and adjust the seasoning if need be. Enjoy!
- Orange Juice
- Cut the oranges into half.
- Use a manual or an electric citrus juicer to make juice.
- Pour into a glass and enjoy!

Notes
- I drink the orange juice at breakfast (around 10.30 a.m) and rarely after lunch. It is generally recommended not to drink orange juice in the evening as it disrupts sleep.
- Orange juice has a lot of fructose in it; so, drink small amounts and have a balanced diet. It is best to eat a whole orange because of the fibre that it contains. I plan to drink fresh orange juice every day during winter, as this is when I need it the most for the Vitamin C. Moreover, oranges are in season during this period. Later on, I will go back to eating whole fruits.
- You can have the fresh winter salad as part of your breakfast, lunch or dinner. When I prepared this for the blog, I ate it with pasta. It made such a heavenly combo!

Winter Food Staples: 2 Indispensable Recipes to Brave the Biting Cold in Poland!
When I visited Ethiopia in November last year, little did I know how much this trip would have a lasting impact on my diet. The vast array of savoury vegetarian dishes that I tasted and enjoyed there have had a special effect in what I buy, drink or eat on a daily basis.
While in Addis Ababa, I used to drink a glass of fresh juice from a variety of fruits such as mangoes, papayas, pineapples and watermelons every day. This is why when I came back to Warsaw, I continued this habit and started drinking fresh orange juice daily. Since then, I have not fallen sick as is usually the case in winter. Honestly speaking, I was quite elated!
Hence the reason for today’s post. I wanted to share some of the winter food staples that I have been eating or drinking , so that you can pick an idea or two. Below are some of the extraordinary properties of the fruit and vegetables in the recipes! They are simply incredible!
- Oranges: These fruit have multiple health benefits. They abound in Vitamin C and help with iron absorption. It is preferable to eat an entire orange because it contains dietary fibre which is good for your guts.
- Radishes: These are typical winter vegetables. You can eat both the roots and the leaves. I usually eat them raw accompanied with other vegetables such as carrots and cucumbers. Like oranges, radishes are rich in Vitamin C and antioxidants. They also have a lot of potassium and dietary fibre which is good for digestion. I love radishes’ strong flavour and crunchy texture and this is why they are a staple in our household.
- Parsley: This is a popular aromatic green herb that can be used in both its fresh and dry form. It can be flat or curly. I usually incorporate it in salads and quiches. This versatile herb is rich in Vitamins A, C and K, among many others. I love it fresh and constantly use it in our house.
- Red onions: These are also known as purple onions. You can eat them cooked or raw. They are great in salads thanks to their sweet and pungent flavour. They contain a lot of Vitamic C as as well as dietary fibre. These are definitely the stars of my winter food staples.
It is easy to eat winter vegetables as they are often fresh and affordable. You can incorporate them in salads, sautés and soups. They are both tasty and healthy.
