This special mandasi recipe is one of my favourites. It’s so easy to make and will delight your loved ones. It’s always the queen on my birthday. Level A2-B1.

Tasty Mandasi Recipe

Ingredients

  • 600g all-purpose flour

  • 6 tablespoons granulated sugar

  • 1 and 1/2 tablespoons baking powder

  • A pinch of salt (optional)

  • 75g unsalted butter

  • 1 tumbler milk

  • 2 medium-sized eggs

  • 2 litres sunflower oil

Directions

  • Mix all dry ingredients with a fork: flour, baking powder, sugar and salt. Set aside.
  • Whisk eggs and milk until white and fluffy.
  • Add butter to the dry ingredients. Mix with the tips of your fingers.
  • Add the egg mixture to the dry ingredients. Use a fork and incorporate slowly.
  • Use hands to knead the dough. Add a little flour if the dough is too sticky. Knead until the dough is elastic. Cover with a tea towel and wait for 30 minutes.
  • Afterwards, spread the dough with a rolling pin. The height should be about an inch.
  • Start heating the oil. The heat should be medium-sized otherwise your mandasi will just be brown on the outside but will not be cooked inside.
  • Use the mouth of a tumbler to cut out small pieces. Shape into desirable look.
  • Then, drop the raw mandasi pieces in the hot oil one by one. Stir well.
  • Fry until golden brown and crunchy outside. The inside should be soft and fluffy.
  • Get ready to fry the next batch of mandasi.
  • Enjoy your mandasi with a cup of tea or coffee! Yummy!

Notes

  • After the first batch of mandasi are cooked, I usually turn off the gas so that the oil cools down a little bit. This prevents the next mandasi from getting brown too quickly when you fry them.
  • We say "one ndasi" and "two mandasi". For example: I am eating a ndasi. or I am eating mandasi.

  • They are popular as street food in most parts of Africa. The names and shapes vary but we basically have the same recipe.
  • They are very easy to make. Just follow the steps carefully.
  • You don’t need many ingredients so the recipe is not hard to remember. You can know it by heart in no time at all.
  • Mandasi are cheap to make. This recipe gets you about 20 mandasi. This is why we make them during parties or other public gatherings.
  • You don’t need to eat many of them to feel satiated. 2 to 3 mandasi are enough. Don’t get addicted!
  • It’s possible to add other ingredients such as cinnamon powder. This adds extra flavour.
