This is my French husband's recipe. He added a twist to the classic 'Gratin de chou-fleur' in order to suit our family's taste. This is a rich and popular dish that everybody enjoys in our family. Why don't you try it?

Ingredients

  • 1 cauliflower

  • 8 to 9 medium-sized Irish potatoes

  • 2 large chicken breasts

  • 200g Sour Cream (18% fat)

  • 4 garlic cloves

  • Grated cheese (preferably cheddar, gouda and/or mozzarella)

  • Olive oil

  • Chicken spices

  • Salt and black pepper

  • Ustensils
  • 1 pie dish

  • 1 steamer

  • 1 frying pan

  • 1 garlic press

Directions

  • Wash the 2 chicken breasts properly and cut them into small pieces. Put the diced chicken in a bowl and set aside.
  • Peel and crush the 4 garlic cloves using a garlic press.
  • Add the crushed garlic to the chicken and season with your favourite spices. I used small amounts of chicken spice, ground pepper, chilli powder, sweet ground paprika and spicy ground paprika. I also added salt and black pepper.
  • Add olive oil and mix very well. Cover and set aside.
  • Prepare the steamer by adding some water in the bottom part. The water should barely touch the top part. Add salt and set aside.
  • Wash the potatoes very well and dice them. Rinse afterwards and put in the top part of the steamer. Cook at medium to high heat until soft but not mushy. The potatoes should retain their shape.
  • Meanwhile, start cooking the chicken as well. Cook at medium to high heat and make sure that the chicken parts brown evenly. Stir constantly. When the chicken is cooked, cover the frying pan with a lid and set aside.
  • Prepare the cauliflower by washing it and cutting it into small pieces. Make sure you have more cauliflower than potatoes.
  • Prepare the steamer by adding water to the bottom pot. Use a Maggi cube instead of salt to give more flavour to the cauliflower.
  • Cook at medium to high heat. The cauliflower should not be mushy when cooked.
  • Wait for the chicken, potatoes and cauliflower to cool down before you start the next process.
  • Take the chicken and put it in a bowl. Do not rinse the frying pan. Put the cauliflower in the pan and let it absorb all its flavours. Accelerate the process by stirring. Add the cauliflower to the chicken. Finally put the potatoes and the sour cream. Mix carefully. Do not crush the potatoes or the cauliflower.
  • Add the grated gouda cheese and mix well.
  • Transfer the contents of the bowl into a pie dish. Sprinkle gouda grated cheese and any other type if grated cheese that you have. Season with black pepper.
  • Bake for 30 minutes at 180 degrees Celsius.
  • You can serve the 'gratin de chou-fleur' with red cabbage salad.
  • Bon appétit and enjoy!

Notes

  • You can add a Maggi cube to the chicken for extra flavour. Do this before cooking the chicken.
  • This dish really goes well with red cabbage salad. Add Balsamic vinegar, a red onion, an apple and parsely to the salad. Season with salt and black pepper. You will love this!
  • You can experiement with different types of grated cheese. The sky is the only limit!

A Popular Cauliflower Recipe

The first time I ate this dish, I was so mesmerised by its unique taste that I kept going back to the pie dish to get some more.

I was not the only one. My daughters also did the same.

In the end, I asked my husband: “What’s the secret?”

A strong, hearty laugh was all I got and, of course, my husband kept his secret, but not for long. He revealed the steps of his treasured recipe and I was able to recreate it with some personal touches.

The result was as satisfying.

I can safely say that this cauliflower recipe is one of our family’s staple food and we never get tired of it.

  • Cauliflower gives this dish a strong, pleasant flavour without overwhelming it. This is a good way to introduce your loved ones to cauliflower if they they do not like it. One even forgets that he or she is eating cauliflower!
  • This is a healthy ad well-balanced meal while also providing much-needed comfort in winter. Apparently cauliflower is also rich in vitamin C, antioxidants and fibre.
  • Overall, the different components of the dish add something special to the taste or health benefits, making this a super dish.
  • It is fairly easy to prepare.
  • The ingredients of this dish are easy to find, especially in winter.
  • Left-overs are even tastier than the original dish!
