Moist Banana Cake Recipe

Ingredients

  • 2 ripe bananas

  • 160g all-purpose flour

  • 150g granulated sugar

  • 170g unsalted butter

  • 10g of butter for browning the bananas

  • 1 tablespoon baking powder

  • 3 eggs

  • 1/2 teaspoon ground cinnamon (optional)

  • A pinch of salt

  • Some raisins (optional)

Directions

  • Pre-heat your oven to 180 degrees Celsius (356 degrees Fahrenheit).
  • Cut bananas into thin slices and brown them on medium heat for about 5 minutes. Midway, add 1/4 teaspoon of ground cinnamon and 1 teasppon of brown sugar to caramelise. Set aside to cool.
  • Whisk the eggs and sugar until creamy and fluffy.
  • Melt the butter and let it cool.
  • Mix the flour, baking powder and 1/2 teaspoon of ground cinnamon with a fork.
  • Add the melted butter slowly.
  • Add the caramelised bananas to the mixture.
  • Grease a baking tray and flour it lightly.
  • Pour the mixture in the baking tray and bake for about 35 to 40 minutes.
  • Serve with a cup of tea or coffee. Enjoy!

Notes

  • This is a very easy recipe to make. It's actually our family's favourite. You can use less butter or sugar if you are worried about calories. Do try it and let me know how it turned out!
